Khao Yai
Khao Yai National Park was Thailand's first National Park, established on September 18, 1962 and is located 400 m and higher above sea level, making it cooler and more pleasant than the hot, humid lowlands in Central Thailand.
You will get up before sunrise and embark on a hike to spot Khao Yai's gibbons. The early morning is the best time of day for spotting wildlife.
Back to the Park's headquarters for breakfast.
After breakfast (on own costs) start on the long hike from the park's headquarters to Haew Suwat waterfall.
Lunch at Haew Suwat.
In the afternoon walk from Haew Suwat to Pha Kluay Mai waterfall or relax at the waterfall.

Bring this unique, fragrant, Thai-style sausage to your next barbeque party, and rest assured nobody will have the same thing. We used high quality ground pork from a local butcher who used pork shoulder, and we suggest you do the same but it's not necessary. This is a rich, tasty meal in itself because of the mix of meat and rice, and one you can find all over Thailand especially in the Northeast (Isaan) area. Ingredients
1 lb ground pork
1/2 cup cooked sticky rice
1.5 tablespoon fresh garlic, pulverized in a mortar and pestle
1.5 tablespoon pickled garlic, pulverized in a mortar and pestle
1/2 tablespoon Thai pepper powder (do not substitute)
1/2 tablespoon salt
1/2 tablespoon Golden Mountain Sauce
1/2 teaspoon corriander seed powder
Method
Put the pork and all other ingredients in a food processor and thoroughly mix. With clean hands, separate the meat into 3 or 4 sections, and wrap each section carefully and tightly with plastic wrap. Follow that with some tin foil for added protection. Set the sausage out at room temperature (not in the fridge) for 1-2 days. Remove from plastic wrap and foil.
Barbeque the sausage over medium/low heat for about 20 minutes or longer. Note the fragrant aroma, and make sure it's well-cooked. You can fry in oil if barbeque is not available.
Serve with fresh chile peppers, garlic, pickled ginger, spring onion, cilantro, leaf lettuce, cabbage and other greens you may like.

Northeastern region (Isaan or Esaan)
Known as Isaan or Esaan, the northeast is the least changed part of Thailand and offers a fascinating mix of traditional rural life and culture, mountain sceneries, Mekong river life and spectacular Khmer temple ruins from the Angkor period. Traveling through the Esaan region is like traveling back in time. The people of the Isaan pursue agrarian lifestyles dictated by the annual cycle of the farming seasons and unchanged by the passage of time. The region’s ancient cultural traditions and customs in music, folk dances, legends and festivals are better preserved here than anywhere else in Thailand and the population is friendly and charming, even though it is among the poorest of Thailand. The lower Esaan was part of the old Angkor kingdom. Ruins of Angkor temple sanctuaries are scattered across the countryside. The most impressive examples of these "Prasat Hin" (stone castles) are the superbly restored sites at Phimai and Phanom Rung, both historical parks, and the great temple complex at Khao Phra Viharn on the Cambodian border which is also now accessible to visitors after a long period of isolation. The region is home to some of Thailand’s best loved national parks Khao Yai and Phu Kradung. Other Esaan attractions include the ancient revered temple at Phra That Phanom and the wonderful silk-weaving villages of Khorat and Khon Kaen. The region's most precious treasure, however, is its charming people as you can experience for yourself during a homestay when you will stay a few days at home with a Thai host family in a small country village in Khonkaen and take part in authentic daily country life.
Esaan is Thailand's most authentic region as it has not yet been discovered by mass tourism, which makes traveling through Esaan a wonderful and rewarding holiday experience.
